Perfect Every Time Banana Chocolate Chip Muffins

My Son Jack helped me bake these very simple and easy Banana Chocolate Chip Muffins. They are so good! They were gone by dinner time.

Ingredients:

  • 3 Large Ripe Bananas
  • 3/4 Cup Sugar and some extra set aside
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla
  • 1 egg
  • 1/2 cup or one stick butter, melted
  • 1 1/2 cup chocolate chips
Preheat oven to 375

Line your 12 count muffin tin with liners and then spray them with non stick cooking spray, yes inside the papers.

Mix the flour, baking powder, baking soda and salt in a mixing bowl.

Combine the bananas and sugar in a separate mixing bowl and mash with a potato masher until mashed and mixed well.

Beat the one egg with a fork with one teaspoon pure vanilla, then add to the banana, sugar mixture.

Add the flour to the banana mixture a little at a time just mix until blended (do not over mix). Add the chocolate chips mix in.

Using a ice cream scoop, scoop batter into the muffin tins.

Sprinkle the sugar you have set aside all over the top of the muffins.

Bake 20 minutes, remove and let cool on a baking rack.

Makes 12 yummy muffins ;)

Happy Cooking!

Karen B's Homemade Carmel Apple Bread Pudding

Karen B's Homemade Carmel Apple Bread Pudding is a special dessert
and loved by many. It will bring a smile to your family as well as warm their tummy's.

It's quiet simple all you need are the ingredients and you will be surprised at what they are!

Ingredients:
  • One Dozen Cinnamon Cake Doughnuts
  • 1 1/2 Cups Granulated Sugar
  • 5 Large Eggs
  • 2 Cups Milk
  • 2 Teaspoons Pure Vanilla Extract
  • 1 - 1/2 Cup Chopped Dried Cinnamon Apples ( I use Mariani Fuji Apples w/Cinnamon) If you cannot find dried apples use two fresh apples chopped and dredge in Cinnamon and Sugar.
  • Cinnamon & Sugar (mixed together)
  • Two Carmel Apple Wraps
  • 1/4 Cup Chopped Pnuts (optional) (you can find chopped Pnuts at the store)
Preheat the oven to 350.

Prep a 9 x 13" glass dish with cooking spray.

Take your cake doughnuts and break into pieces show here, place into pan.

Chop your apples into 1/2 inch size pieces, sprinkle over doughnuts.

Take two Carmel Apple Wraps and remove paper.

Cut with kitchen scissors into small pieces, it is easier to use scissors than a knife. Sprinkle Carmel pieces and Pnuts over doughnuts and apples. Gently mix in with hands to distribute evenly.

In a bowl add the eggs and whisk. Add the milk, sugar and vanilla mix until sugar is dissolved. Pour the eggs and milk mixture over the doughnut mixture. Press down the doughnut mixture with a spatula to make sure all the doughnuts get covered with the eggs and milk.

Let sit for five minutes.

Sprinkle Cinnamon and Sugar over the entire top of the bread pudding.

Bake at 350 for 35 to 45 minutes until set.

Serve warm with a dollop of whip cream or just by itself!

It is delightful!

Happy Cooking ;)

Garlic and Oregano Grilled Pita Bread

Summer is time for grillin and chillin! What better way to add fun ingredients to your menu than grilling.

Grilled Pita Bread with Garlic and Oregano (from our friends at Gourmet) is a family friendly addition to any meal.

I made this side dish and loved it! However I did add some more herbs the second time around. You can change this recipe to your liking or use what ever you have in the pantry ;)

Ingredients:
  • 3 Tablespoons extra virgin Olive Oil
  • 2 Garlic Cloves, smashed
  • 2 Tablespoons finely chopped Oregano
  • 6 (6" - 8") Pita Bread Rounds (with out the pockets works best)
  • Kosher Salt to taste
Preheat the grill.

Heat Olive Oil in small skillet on medium heat, cook Garlic until golden brown not burnt, remove garlic and discard. Remove oil from heat and stir in Oregano (or other herbs).

Oil grill and grill the Pita Rounds for about two minutes or until light grill marks appear on the bread. Remove from grill.

Brush both sides with the Garlic, Oregano flavored Olive Oil and sprinkle with salt to taste. Cut into wedges and serve.

Enjoy!

Quick and Easy 15 Minute Homemade Doughnuts Kids Love!

Surprise your kids with fresh and hot Homemade Doughnuts!

This recipe is so easy it's hard to believe! All you need is four ingredients! You can make something special for the little ones or for anyone at any time. For adults you could do the beignet version :)

Ingredients:

  • Canned Biscuits (from the supermarket refrigerator section)
  • Cooking Oil
  • Powdered Sugar and/or Cinnamon and Granulated Sugar mixed

Preheat your oil in a deep fry pan to Med High.

Open Canned Biscuits, separate, and cut a round hole in each center of the biscuits (a 2-liter pop bottle cap works well for this just spray with non-stick spray first).

Place in hot oil (try one sample one first to test heat) turning when they become golden brown.

Remove to a paper towel lined tray, remove excess oil, then dredge in powder sugar or the cinnamon sugar mixture, place on serving tray! Be careful....still hot!

Cook the little holes for mini bites!

Beignet Version:

For Adults: roll dough lightly into a ball then fry, pile cooked balls onto a tray and sprinkle with powdered sugar. Serve with Chicory coffee just like New Orleans!

Enjoy!
