NFL Superbowl Worthy Sloppy Joe's Made Easy!

These Sloppy Joe's will e a huge hit with the Men watching the Superbowl game as well as the kids. This easy recipe can be made any time as well as being made ahead and reheated.

Ingredients:
  • 2 cups onion chopped
  • 3 lbs. ground beef or ground chicken or ground turkey
  • 2 cups Open Pit Barbecue sauce
  • 1 cup yellow prepared mustard
  • 1/2 Worcestershire sauce
  • 1/4 cup brown sugar
  • slices of cheddar or American cheese (optional)
  • 24 slider buns or 12 hamburger buns
Heat 1 1/2 tbsp oil in large pot. Saute the chopped onions 3 to 4 minutes until just tender.

Add the ground beef, cook until browned stirring often. Drain.

Add the cooked ground beef back to the pot and add the barbecue sauce, mustard, brown sugar and Worcestershire sauce. Simmer about 15 minutes. Spoon onto buns, top with cheese and serve.

You can also set up a Sloppy Joe Bar, in small bowls have several toppings for your guests to create their own version of a Sloppy Joe some toppings are:
  • jalapeno peppers
  • hot sauce
  • cole slaw
  • cooked bacon chopped
  • shredded lettuce
  • sliced tomato's

You can keep the Sloppy Joe's warm in a crock pot on the buffet and have everyone self serve them selves.

Quick and Easy Healthy Chicken Stir Fry

In a hurry to make dinner and not a lot of time to do it or are you tired? If so here is a quick and easy recipe any one can do with any meat and veggies on hand.

Here I've whipped up a quick chicken stir fry. In my new handy dandy wok which I love by Nordic Ware provided to us by CSN Stores.

Ingredients:
  • Two large chicken breasts sliced thin
  • One stalk celery sliced 1/2" thick on an angle
  • One large carrot sliced 1/2" thick on an angle
  • Two handfuls whole french green beans
  • Two scallions (green onions) sliced on an angle
  • Two cups cooked whole wheat thin spaghetti noodles
  • One large clove garlic, chopped
  • Low Sodium Soy Sauce
  • 1/2 cup cold water or cold chicken broth
  • Corn Starch
  • Salt
  • Pepper

You can add more or less vegetables: mushrooms, fennel, kayle, ginger etc...

Marinate the chicken slices in two tablespoons low sodium soy sauce while you are slicing up the veggies.

Add one tablespoon olive oil to wok and heat.

Season chicken with salt and pepper add to heated wok, let sit a minute to lightly brown and then turn and cook through. Remove from wok and place in a covered dish, set aside.

Add a dash more oil to wok and add the veggies. Season with salt and pepper. Cook veggies until almost tender but with a bit of a crunch for that "fresh taste".

Mix in a small bowl one tablespoon cornstarch, two tablespoons low sodium soy sauce and 1/2 cup cold water or cold chicken broth, set aside.

Add cooked chicken, whole wheat noodles and veggies to the wok toss to combine and heat, add corn starch soy mixture, toss to combine until thickened (if too thick add a little more broth or water a little at a time).

Remove to serving platter and enjoy.

Serves (2) healthy size servings.

Easy Winter Skillet Chicken

This easy skillet chicken is great for a cold Winter day! It's a one dish meal and everyone loves it. Just add your families favorite cut of chicken and your on your way.

Ingredients:

  • One package of your favorite cut up chicken parts
  • Flour for dredging and gravy
  • Two Cloves Garlic diced
  • Two Carrots diced into small squares
  • One Celery Stalk diced
  • 1/2 Onion diced (green onion or leek is fine also)
  • 1/2 package frozen Peas.
  • One can low sodium Chicken Broth.
  • Two tablespoons dried Parsley flakes.
  • Salt/Pepper
Wash and pat dry chicken. Season with Salt and Pepper.

Dredge in flour coating well.

Preheat skillet with olive oil (enough to cover bottom of pan) to medium.

Brown chicken on all sides. Remove and place on paper towel.

Add a little more oil to pan with the drippings (the drippings have all the flavor) and add the Carrots, Celery, and Onion. Add a dash of Salt and Pepper at this time. Saute until onions turn opaque and carrots start to get tender. Add Garlic and saute for two minutes or so, do not burn (Garlic will get bitter).

Add two Tablespoons flour to pan, stirring for about a minute or two to remove the raw flour taste. The mix will get real thick at this point it's okay!

Wine Option: You can add a cup and half of white wine at this point if you would like. Stirring constantly and cooking out the alcohol for about a minute or two.

Slowly add the chicken broth stirring constantly and getting all the yummy bits from the pan. You should have a gravy like consistency. If you find it's too thick you can add more broth or some water if you like.

Add the Parsley flakes and stir.

Add the chicken back into the sauce and the frozen peas. Simmer for about 15 minutes until chicken is cooked through.

Serve over rice or egg noodles.

Crispy Grey Poupon Dijon Chicken


This easy crispy Dijon Chicken only takes 15 minutes to prep and 15 minutes to bake ;)

Ingredients:
  • 4 boneless, skinless chicken breast halves (or 1 lb. of chicken)
  • 1/4 C grated Parmesan Cheese
  • 1/4 C plain, dry breadcrumbs
  • 1/4 C Evaporated Fat-Free Milk
  • 1/4 C Grey Poupon Dijon Mustard
  • Nonstick cooking spray
Preheat oven to 475.

Spray 13 x 9 baking pan with nonstick spray (or brush with olive oil).

Pound Chicken Breast to tenderize.

Combine evaporated milk and Dijon Mustard in shallow dish.

Combine breadcrumbs and Parmesan Cheese in another shallow dish.

Dip Chicken into mustard mixture, coating both sides, then dredge into breadcrumb mixture covering well.

Place in prepared pan.

Bake for 15 to 20 minutes until chicken is nicely browned (170 F) and no longer pink in the center.

Hint: Over cooking will make white meat dry out. The temperature rises 5 degrees when you remove the chicken from the oven and continues to cook. The first time making this dish may be your trial run, but once you have it down it's a piece of cake ;)

Serve with: Sauteed Peas and Asparagus click title to be directed to recipe.
